Dehydrator Trays & Teflex Sheets

I'm new to this group and to a raw foods diet. I have a convection

oven with a dehydrator setting (which I can set as low as 100), so I

should not need to buy a dehydrator. Does anyone have any suggestions

for what to use or buy for dehydrator trays? Also, I see a lot of the

cookbooks and web sites recommend using Teflex sheets with the trays.

Is anyone concerned about Teflex, since it is made of Teflon which is

now undergoing additional FDA testing for health risks? (See

Would silicone baking sheets work as well, and do they have any health

risks?
