There are several posts earlier on this board about how to do that... and, basically, the best way I've found, after some guidance from Elchanan, has been to place them in Mason/Ball qt. canning jars... and then " vacuum-pack " them - basically, suck the air out of them... they'll store for months like this on their side in the refigerator... all the best, Bob _____ Perfect. Just want to emphasize " lying on their side. " Dates can be easily crushed under their own weight. So store the jars in the refrigerator lying down, as Bob suggests, not standing up. Oh, and some of those vacuum machines cost less than $100, make sure you get one with a jar attachment for wide-mouth jars, and make sure you buy wide-mouth mason jars.
