It's one that is good to take to a potluck or picnic. I used fresh corn, cut from the cob and sautéed for about 2 mins, because I had so much! It's good with canned corn also, but the fresh is available now, so why not try it that way! (As usual, I halved the recipe and had enough for 3 people to have a large bowl full) Jane Black Bean and Corn Salad 1/2 cup olive oil 3 Tbsp cider vinegar 2 tsp minced garlic 1 tsp. each...cumin, salt and sugar 1/2 tsp cayenne pepper (I used black pepper) Whisk dressing ingredients in a large bowl... Then add: 3 -16oz cans black beans, rinsed 2 cups diced celery 1- 15oz corn 1/2 cup chopped red bell pepper 1/2 cup chopped cilantro (I used flat leaf parsley because I don't like cilantro!) I did add some fresh diced tomatoes and diced onions to it, because we love those.
