We have three kids, Jeremy is 28 (disabled, handicapped, born with Williams syndrome still lives with us), Stacia, our only daughter is 26, has two kids Dyllan almost 9 and Izabella age 5, and about to give birth to baby Justin (she has been on her own for about 5 years), and Jameson, our second son, and final child, age 22, student at Walla Walla College, majoring in computer engineering, minoring, I guess in math, home for the summer working at Adventist Medical Center, and staying with us. My husband and I attended one of Weimar's three day " live-in " seminars about 5 years ago, learning the basics of their vegan program, then he went to Black Hills Health Education Center in the summer of 2004 for a three week live in, came back very enthused about it, then in September 2004 we attended a month long C.H.I.P. program at our church. I learned a lot from these things, and have endeavored to stay on the program. It is difficult. My husband is a type 2 diabetic. Has been critically ill on a number of occasions over the past 4 to 5 years. Last year, he became seriously ill, when a wound on his left foot refused to heal. He was hospitalized three times, twice at Adventist here in Portland, and once in a hospital in Roseburg Oregon. The gist of it was he was diagnosed with MRSA. This stuff is very resistant to antibiotics. He was released from Adventist the second time, still running fevers, and so weak, he could hardly stand unsupported. His family came and got him 5 days after his discharge. I was taking care of him, and Jeremy here by myself. (please I am not looking for accolades, that is just the truth of the matter). It was round the clock nursing care, including IV antibiotics, I had been trained to administer using the PICK line. Also had to change dressings on his wound. Well, anyway, day after he left here, he was admitted to hospital in Roseburg after spiking fevers of over 104 degrees. Doctors there traced infection to wound in his foot, and between the docs and my husband it was decided the left foot had to go, and on November 7, 2005, they took his foot off to 8 inches below his left knee. Now, he has a prosethsis. I am enjoying the cooking of the vegan/vegetarian diet. As Seventh Day Adventists, we should have been on this for years, as our denomination espouses the original diet God gave Adam and Eve in the beginning. I, too, have lost my mother recently. She passed away February 15, 2004. It was sudden. She had a heart attack. She had fallen at home on New Years Eve and was hospitalized. they ruled out a stroke, but discovered she was weak from not eating properly and she also had diabetes. After her discharge from the hospital to a nursing home, it was hard trying to get her to eat. The whole thing was to get her strong enough so she could go to a assisted living situation for a few months for her to be able to regain her strength. She was very discouraged, hated being in the nursing home, and I am sure she fretted herself to death. The plan was when she was strong enough, they were going to operate and fix her abdominal hernias she had for years. Well, that is the story, as sordid as it is. We are healthier being vegetarian than we have been, but we have problems with having the fortitude to stick with it long range. It is tough but we just have to be strong enough emotionally to handle it. The food is delicious and such a wide variety. Thank you for letting me join this group. Always looking out for new recipes. You have been through some trying times but looks like you are on an up-hill path now to happiness and good health.
