Here is a favorite in our family. I get lots of veggies in my family with this

recipe, even ones they don't normally care for.

Veggie Lasagna

 

1 qt.jar of favorite Spaghetti Sauce

1 qt.. Cottage Cheese

1 Onion, diced

4 c. broccoli chopped fine

1 lg. can of sliced mushrooms

1 Bell Pepper, diced

1 16 oz. bag. Spinach frozen and chopped, thaw and squeeze out moisture

1 Zucchini or Yellow Squash, diced fine

3 cloves of Garlic, minced

2 Tbsp. Oil

9 lasagna noodles

2 c. Parmesan Cheese

2 c. Cheddar Cheese

1 c. Mozzarella Cheese

1 Tbsp. Oregano

 

Saute in a large frying pan, all the veggies until tender crisp and still

brightly colored in the cooking oil. Mix the Cheddar, Parmesan Cheese and

Mozzarella cheese together in a bowl with the Oregano. Boil your Lasagna Noodle

as directed on the box. Drain. In a large 9 x 13 inch casserole Dish, spray

with Cooking Spray, then add a very thin layer of spaghetti sauce. Then 3

noodle, lined up side by side in the dish. Layer 1/3 of the Veggie mixture,

then 1/2 of the Cottage Cheese and 1/3 of the Cheese Mixture. Then layer 3 more

lasagna noodles side by side. Layer 1/3 of Veggie Mixture, 1/2 Cottage Cheese,

1/3 Spaghetti Sauce and 1/3 Cheese Mixture. Layer the last 3 noodles, then last

of veggie mixture, then the last of the Spaghetti Sauce. Top with remaining

cheese . Bake for about 1 hr at 375 degrees.

 

*Sometimes we brown a can of Worthington Vegetarian Burger and add to the

Spaghetti Sauce. You could use Morning Star Crumbles.

I'm new and eager to find some tasty recipes -

 

 

Right now I'm wondering if anyone has a recipe for a

vegetable lasagna using store bought sauce and fresh veggies. I need

something quick, fast, and hearty. I've never made lasana before so I

don't know where to begin. PLease help.

I just realized that I left out the 1/3 spaghetti sauce layer over the cottage

cheese in the first layer.

 

A friend combines the Cottage Cheese and Spaghetti Sauce together and says it

has a less acidic taste. I make it this way sometimes also.
