Lily Summer Squash Summer Cake 3/4 c. sugar 1 egg 1/2 c. flour 1 tsp. baking powder 1/4 c. nut meats (peacans, walnuts, any you like) 1 tsp. salt 1 c. summer squash (patty pan) grated 1 tsp. vanilla Ice cream of whipped toppings are optional of course Beat egg and sugar. Mix well. Add the dry ingredients plus squash, nuts, vanilla. Pour into greased pie pan or 8 X 8- inch cake pan. Bake at 300 degrees about 45 minutes. Serve warm with ice cream or whipped cream topping. This cake contains no shortening. Freezes well and is even better the second day after baking.
