Fresh Blueberry Pie

 

1 9 inch unbaked pie shell

1/3 cup flour

1/2 cup sugar

1/2 teaspoon ground cinnamon

4 1/2 cups fresh blueberries

1 tablespoons lemon juice

1/2 cup firmly packed brown sugar

1 cup flour

1/2 cup margarine or butter

 

Combine flour, 1/2 cup sugar, cinnamon and

blueberries. Mix well and put into pie shell. Drizzle

top with lemon juice. Combine 1/2 cup brown sugar and

flour. Cut in butter until mixture resembles coarse

meal. Spread topping over berries. Bake for 30 minutes

at 425F, then cover with foil and continue baking for

20 minutes more.

Hello Star!

That recipe sounds wonderful!! I was wondering...Last year I picked

blueberries and froze the excess. Can I substitute them?(drained of course!) I

am new here & all the posts are most friendly and helpful! The recipes are

really yummy sounding. I am a mother of 7 (3 girls then 4 boys) and have been

lacto-ovo for 24 years (I am 36). My girls are also veggie as is the baby (I

nurse & feed only veggies, fruit, grains & he drinks soy or juice). The other

men in my life are still meaties (although they eat vegetarian also!) Thank you
