Guest guest Posted July 28, 2006 Report Share Posted July 28, 2006 Coconut Ginger Rice 2 cups jasmine rice 2 cups coconut milk 4 cups water 1 tablespoon ginger, peeled and minced 1 tablespoon olive oil 2 tablespoons salt Combine all, bring to a boil, then finish in a 350 degree oven for about 15 minutes, or cook in rice cooker.
