Christie Buckwheat with lemon and herbs 250g (9 oz) organic untoasted buckwheat 1 Tbsp olive oil long strands of lemon zest from 1 lemon juice of 1 lemon 4 Tbsp flat leaved parsley, chopped 4 Tbsp chives, chopped 6 spring onions, cut into long shreds Rinse buckwheat and dry toast for about 5 mins. Add 600mls (1 pt) boiling water, cover and leave for 15 mins. Then drain off any remaining water, if necessary. With a fork, stir in oil, herbs and lemon juice and zest. Serve immediately.
