Guest guest Posted July 26, 2006 Report Share Posted July 26, 2006 Tomato Feta Couscous Salad 1 cup water 1 cup uncooked couscous 3 roma tomatoes chopped 1/2 red pepper chopped 1/2 yellow pepper chopped 1/2 english cucumber chopped 1/2 container mixed sprouts 3 green onions chopped 1/2 red onion chopped 1 large bunch chopped basil 1 large bunch chopped parsley 4 ozs. feta cheese For the viniagrette: 1 tbsp. seeded mustard 1/4 cup balsamic vinegar 1/3 cup olive oil salt & pepper to taste Bring water to a boil in a small saucepan. Stir in couscous. Remove from heat, cover and let stand for 5 minutes. Place the couscous in a large bowl and add remaining salad ingredients. Place the seeded mustard and balsamic vinegar in a bowl and whisk in the olive oil. Season with salt and pepper. Add the vinagrette to the salad and mix well.
