Achiote marinade - Christie

Hi Christie,

You will have to make a fine powder with the mortar

and pestle. Place the ground achiote in a bowl with

enough lemon or lime juice and a little water to make

a semi-thick marinade (not runny like water). You can

add crushed red pepper flakes, black pepper, squeezed

garlic, finely minced cilantro.

This is very tradition of Yucatan Mexico.

Drain your tofu, poke some holes in it with a fork and

rub the paste marinade all over it, let it marinate

for 1-2 hrs and grill or cook.

This is good rubbed on potatoes and roasted.

Thanks, Donna - I shall try that out on some roast potatoes later in

the week if it gets any cooler.

you can pan roast them on the stove top. Use a heavy

skillet with a little oil and I mix a bit of water.

Achiote rubbed thick slices of potatoes and put in the

pan on low with a lid. Just turn them about every 15

minutes until they are all cooked and crispy.

I think you will enjoy this spice a lot.
