Guest guest Posted July 25, 2006 Report Share Posted July 25, 2006 1/4 cup coarsely chopped onion 3 cloves coarsely chopped garlic 6 tbl olive oil Blanch onion and garlic in olive oil. Add/combine: 3/4 small can of tomato paste 1/2 cup water 1 large(largerr) can whole, peeled tomatoes 2 tbl sugar 1/2 teaspoon salt 1 tbl dried basil pepper Simmer (plopping) for about 40 minutes. Crush the whole tomatoes open with a spoon. If you don't want to drink this from a cup, then you haven't made it properly. Haaaaa! Seriously, my hubby and I try to recreate this...it seems so simple, but my mom's got some red sauce mojo working. It shouldn't be a smooth consistency...it should have chunks of tomatoes, the onion and garlic should still be slightly firm, and the oil floats to the top. The brand of tomatoes can definitely affect the outcome. When I asked my mom for the amounts, she just said, " I don't know. I just throw it in. " Good luck!
