Guest guest Posted July 24, 2006 Report Share Posted July 24, 2006 Lemon Rice cooking spray 1 small green bell pepper, chopped 1 clove garlic, minced 2 cups vegetable broth 1 cup white rice 1 tsp. chopped lemon peel 1 tbsp. lemon juice Spray medium saucepan with cooking spray. Heat over medium temperature and add pepper and garlic. Cook, stirring frequently, until tender. Stir in rice. Add broth and bring to a boil. Cover, reduce heat and simmer until done, about 20 minutes. Serves 4. Calories 191, Fat 0.3 g, Carbs 41 g, Sodium 31 mg, Fiber 1 g. Points 4.
