Guest guest Posted July 24, 2006 Report Share Posted July 24, 2006 If you are too hot to cook, but still want a nice dessert, this is the one, especially if you love lemon. No baking required here! Of course Donna will run from this just because it calls for sweetened condensed milk and that stuff creeps her out. *lol* But truly, this is wonderful and once it is all put together it tastes like a lemon dream, not a scream. Refreshing Lemon Pie 1 can (14oz) sweetened condensed milk 1/2 cup lemon juice 1 Tbs grated lemon peel 2 to 3 drops yellow food coloring, optional ~ I skip it 1 carton (8 oz) frozen whipped topping, thawed 1 graham cracker crust (9 inches) In a bowl, combine milk, lemon juice, grated lemon peel and food coloring; mix until smooth (mixture will begin to thicken). Fold in whipped topping; spoon into crust. Chill until ready to serve. If desired, garnish with mint leaves and or lemon peel strips. Refrigerate leftovers. Yield: 6 to 8 servings We skip the garnish and just add a dollop of whipped cream or some fresh berries. Another told me they just folded frozen lemonade into coolwhip, poured it in their homemade graham cracker crust and froze it. They were Vegan. Maybe that would appeal to you Donna.
