Thank you for letting me join the group. I just love recipes and now that I

am suffering continual bad health, I think it is time I reviewed my food

choices and get as healthy as possible. I live in Australia, am half a

century old, have five children, two dogs and one cat. I have a recipe for

Potato Bake with Onions

 

500g (1lb) floury potatoes, quartered 2/3 cup whipping cream

2 T sunflower oil 1 egg,

beaten

2 onions, sliced into rings and separated. Salt, pinch nutmeg

1 Granny Smith apple ( the green ones) 2 T sunflower or sesame

45g (1 1/2 oz) Parmesan cheese seeds.

 

Grease or oil a heatproof dish. Preheat oven to 220C (450F/Gas7)

Bring a large saucepan of lightly salted water to the boil. Add potatoes and

cook until soft.

Heat oil in frying pan and add onion rings. Fry for about 10 minutes,

stirring occasionally until golden brown. Set pan aside.

Peel, quarter and core apple. Cut into fairly thin slices.

Drain potatoes, return to dry pan and mash finely. Add cream and egg. Beat

until smooth and creamy, then season with salt and nutmeg.

Spoon half the potato mixture on to the base of the prepared dish. Smooth

surface. Cover with half the onions, all of the apple and half the cheese.

Spread over remaining potato mixture, then rest of onions and cheese.

Sprinkle with sunflower or sesame seeds and bake for 15 minutes. Serve at

once. This is a complete meal but can be served with a green salad or

vegetables and trusty, crusty bread.
