Guest guest Posted July 20, 2006 Report Share Posted July 20, 2006 I make this every year during the summer. Recipe makes around 1 1/2 cups Hi I'm Danny the past lurker. Honest Abe's Corn Relish 2 tsps. extra virgin olive oil 1 tsp. red wine vinegar 1/8 tsp. salt 1/8 tsp black pepper 1 cup corn kernels, fresh, frozen & thawed or cooked 1/2 cup cherry tomatoes, finely diced 1/4 cup red onion, chopped 1 Tb. chopped fresh basil Whisk oil and vinegar together in a medium bowl. Season with salt & pepper. Stir in corn, onion, tomatoes and basil. Cover and chill. Place in container and take on a picnic. Top your veg-burger or tofu dog with this.
