Do you have an Asian market in your area? If so you might find tofu for a good price. I don't know why the price is so high in certain areas, is it because many aren't buying it? I just don't know. I'm in LA and this is tofu haven, each brand will have a sale when the other isn't on sale. I almost always find a tub of tofu for 99 cents to $1.19 Now, If you want to give tempeh a try then go to the recipe files and look in the substitute folder and you will see a folder sey up with tempeh recipes. I always steam tempeh 20 minutes and then use in recipes, it plumps up and softens. I cooked some (boil in bag) brown rice while the kitchen was cooler this morning and am going to try to make the mixed bean and rice salad from a post. Our closest Asian market is 75 miles away. I can find Chinese cabbage and won-ton wrappers and of course canned stuff in Kroger. If gardens can survive the heat, local growers will have produce for sale at the Farmer's Market, open two days a week.
