Guest guest Posted July 19, 2006 Report Share Posted July 19, 2006 Potato Tapas 1 lb. potatoes, thinly sliced 2 tbsps. finely chopped onion 1 tbsp. vegetable oil salt to taste 1/2 cup diced tomatoes 2 tbsps. seeded, diced Anaheim chilies 1 cup shredded cheddar cheese 1 cup salsa Spread potato slices evenly on greased cookie sheet. Brush with oil and sprinkle with onions and salt. Bake at 400 degrees 25 to 35 minutes or until potatoes are cooked and browned. Sprinkle tomatoes, chilies and cheese on top.
