Guest guest Posted July 18, 2006 Report Share Posted July 18, 2006 Ginger-Garlic Broccoli Spaghetti 1 large head broccoli 1 tbsp. olive oil 2 cloves minced garlic 3 tbsps. peeled, grated fresh ginger 1 1/2 tbsps. flour 1 1/2 cups soy milk or evaporated skim milk salt to taste fresh ground black pepper to taste 4 cups cooked spaghetti Meanwhile, cut broccoli into florets. Peel stems and cut into slices. Steam broccoli until just tender, about 5 to 7 minutes. In a medium saucepan, heat oil over medium heat. Add garlic and ginger and cook, stirring often until golden, about 1 minute. Reduce heat to low and add flour. Cook 2 to 3 minutes, stirring constantly to prevent browning. Gradually stir in soy milk and salt and pepper. Cook, stirring frequently until sauce is thickened and bubbly, about 3 to 5 minutes. Cook spaghetti according to package directions.
