Guest guest Posted July 18, 2006 Report Share Posted July 18, 2006 Vietnamese Mixed Vegetable Noodles 1/2 lb. rice noodles cooking spray 5 cloves garlic, minced 1 tbsp. minced ginger 4 shallots, thinly sliced 2 green onions, thinly sliced, white and green parts 2 tbsps. soy sauce 3 tbsps. water 2 carrots, peeled and julienned 1 cup sliced fresh mushrooms 2 zucchini, coarsely chopped In a large bowl or pot, soak noodles in boiling water for 5 minutes, or until they are soft and pliable. Drain and set aside. Spray a wok or skillet with cooking spray and over high heat, saute garlic, ginger, shallots and scallions for about 1 minute. Add the soy sauce, water and carrots and saute for an additional 2 minutes. Add mushrooms and zucchini and saute for another minute. Add noodles, stirring constantly until they are heated through.
