Guest guest Posted July 18, 2006 Report Share Posted July 18, 2006 Menestra de Verduras 1 tablespoon olive oil 2 onions, diced into 1-inch pieces 1 clove garlic, minced 1 medium shallot, sliced 4 roma tomatoes, cut into 1-inch cubes 2 zucchini, cut into 1-inch cubes 3 yellow crookneck squash, cut into 1-inch cubes 2 small orange-fleshed sweet potatoes, peeled and cut into 1-inch cubes 1/4 teaspoon salt 1/4 teaspoon pepper 1 15-ounce can cannellini beans, rinsed and drained 2 tablespoons fresh basil, chopped Heat the oil in a soup pot over medium heat. Add the onions and cook until tender, about five to eight minutes. Add the garlic and shallot and cook one more minute. Stir in the rest of the cubed vegetables and season with salt and pepper. Cover and continue to cook over medium heat, until the sweet potatoes are tender, about 30 minutes. Stir occasionally, and add a little water if the stew seems dry. Add the cannellini beans and cook 10-15 minutes longer. Remove the stew from the heat and stir in the basil. Let stand ten minutes before serving. Serves 6.
