Guest guest Posted July 18, 2006 Report Share Posted July 18, 2006 2 medium cukes peeled, seeded and diced 3 cups veggie broth 2 tablespoons flour 1/2 teaspoon basil 1/2 teaspoon onion powder 1/2 teaspoon garlic powder 1 pint plain yougurt chopped chives for garnish Combine cukes, and one cup of veggie broth in saucepand and simmer until cukes are soft. Process in blender until smooth Return to saucepan combine flour with 3 tablespoon veggie broth Stir into cucumber mixture Add remaining broth,onion powder,garlic powder, basil, salt and pepper to taste. Simmer apx. 5 minutes Cover and refrigerate until thoroughly chilled To serve: Stir in yogurt. Garnish with chopped chives Quote Link to comment Share on other sites More sharing options...
