I had to make it since I had fresh blueberries and wanted to try this recipe. I doubled this so I could have 2 loaves. Blueberry Bread 1 cup blueberries, rinsed and drained 1/3 cup butter or margarine 1 cup white sugar (I used raw) 2 large eggs 1 1/2 cups flour 1 tsp. baking soda 1/4 tsp. salt 1/2 cup soy milk Preheat oven to 350 Lightly grease and flour a 9X5 loaf pan In a large mixing bowl cream butter and sugar until fluffy. Add eggs one at a time and beat after each addition. In a separate bowl mix flour, salt and baking powder. Add dry ingredients to the creamed mixture alternately with the soy milk. Blend well. Fold in the blueberries. Pour batter into the prepared loaf pan. Bake for 45 to 50 minutes. Test by inserting a toothpick making sure it comes out clean. Cool 10 minutes and remove from pan.
