I'm in LA so I'm not much help with that area. Our recipe files are loaded with recipes and almost all of them have easy to find ingredients. Abby in Arkansas This is one of my favorite vegetarian recipes that I'm trying to wean myself off of, since I'm trying to drop dairy. Corn and Cheese Chowder 4 large unpeeled potatoes, diced 4 cups water or stock 2-3 bay leaves 1 tablespoon butter 1 cup chopped onions 1 teaspoon cumin seed 3 cups corn kernels, fresh or frozen 2 tablespoons unbleached flour 1 cup heavy cream 2 cups grated cheese (I used sharp cheddar cheese) 1 tablespoon chopped fresh chives 1/2 cup minced fresh parsley 1 teaspoon salt dash black pepper (I used some dill, too) Combine potatoes, water or stock, and bay leaves in a three quart stock pot. Bring to a boil and simmer, covered, until tender. Meanwhile, melt butter in a frying pan and saute the onions with cumin until brown. Add to soup, then add the corn. Mix flour with cream until smooth, then slowly add to soup. Add grated cheese, about 1/2 cup at a time, and stir until melted. Keep heat low and watch bottom of pot.
