I've been a vegetarian off and on all my life, and am now making the transition to vegan, mainly for my health, which absolutely needs work. I'm married, mother to three adult kids, the youngest a junior in college. I'm also mom to a delightful keeshond named Lucy who is the light and trial of my life. I'm hoping for some ideas on how to live the vegan life in the south, where every meal one has to attend for various groups features some sort of something I don't want to eat. I find I can't even eat the vegetables because of the broth they were cooked in. Abby in Arkansas This is one of my favorite vegetarian recipes that I'm trying to wean myself off of, since I'm trying to drop dairy. Corn and Cheese Chowder 4 large unpeeled potatoes, diced 4 cups water or stock 2-3 bay leaves 1 tablespoon butter 1 cup chopped onions 1 teaspoon cumin seed 3 cups corn kernels, fresh or frozen 2 tablespoons unbleached flour 1 cup heavy cream 2 cups grated cheese (I used sharp cheddar cheese) 1 tablespoon chopped fresh chives 1/2 cup minced fresh parsley 1 teaspoon salt dash black pepper (I used some dill, too) Combine potatoes, water or stock, and bay leaves in a three quart stock pot. Bring to a boil and simmer, covered, until tender. Meanwhile, melt butter in a frying pan and saute the onions with cumin until brown. Add to soup, then add the corn. Mix flour with cream until smooth, then slowly add to soup. Add grated cheese, about 1/2 cup at a time, and stir until melted. Keep heat low and watch bottom of pot. Your recipe looks great and as soon as we get out of triple digit temps down here in southwestern Georgia (hi ya'll), I'll make it! I hear you on the food down here. Not to mention attempting to come out of the vegetarian closet. Whoooo weeeee, you'd think we were commie pinko's or some other appelation. My survival food is salad. I've had to pick a lot of non veg stuff off of them, though. Thankfully my stomach is mostly gone (long story happy ending) and I cannot, absolutely CANNOT eat meat. Most people understand " stomach problems " and don't hassle me, especially if I pretend to sigh longingly over the slab of cow or ribs they are bobbykuing. (barbequing) I have things I ask for at *burp* fast food places that cater to the carnivore, when you are tired to death of salads. (or have diverticulitis and raw veggies hurt). KFC order the mashed potato bowl and ask them to leave the gravy and chicken off. You end up with mashed potatoes, corn and cheese. Not nutritionally good but one does not go to a fast food place for anything resembling food. (IMO) McD...... oh save me, drive by. Yes they have salads but asking for one without meat is like spitting on the flag. Wendy's decent small side salad with package of dressing with 350 ish calories. Yikes. Order a baked potato and small side salad. Cheap at 1.98 Have it your way Burger King ... just driving by this place makes me soooooo sick...order the jr whopper, ask them to hold the beef. Oh yes, please do hold it, dispose of it! Make sure they don'r just remove the beef from the sandwich, make sure they make it fresh. (doing it the other way is actually a big food service no no, but then they have to be reminded to wash hands after using the toilet.) Pizza...veggie pizza. Not sure what fat they use in the crust, but it should be olive oil. Who have I forgotten? Oh yes, fish places. Ugh. Just Drive By. Even the fries there are toxic. Taco places...ah you'd THINK you could just eat the pintos and rice, didn't you? HA ha ha ha haha....there's lard in them thar beans! Yep, rendered pig fat. (Anyone else other than me getting nauseated here?) Approved veg excuses for down south: " I'm dieting. " This works if you are over a size 0. " It's my stomach, I can't handle meat. " Works really well but there are ALWAYS idiots (friends and relatives) who KNOW better and who will lovingly sneak meat into your food. (Trust me, this has happened to me several times now.) " I only eat organic free range hand tenderized meat, fowl, fish that has been harvested by means of the esoteric rites of the Great Mammalammadingdong. " Try to look holy and spiritual when saying that. Work on saying with a straight face. Finally, if all else fails, fall back on excuse one or wait till you are at home and can veg out.
