Do you have a name for this recipe? Want me to name it? LOL You know how I am

with names, that's part of the fun.

Heat some olive oil in a small skillet (larger, if you are cooking veggies to

serve more than 2 people)t. Saute some frozen pepper stir fry (3 kinds of pepper

with sliced onion), with some fresh cubed (I cut the quash in quarters on the

circle and then small cube slices, or you could just slice and cut into

quarters) yellow squash (or zucchini) and baby snow peas (I got both from the

Farmer's market). Before the veggie mixture is cooked tender, prepare a 10 in

skillet with olive oil (med heat). Add 2-3 beaten eggs (just put in a bowl and

beat up) and cook on med heat...cook on both sides (don't break apart as in

scrambled eggs), until set, but not overly brown. In center of the " omelet " add

some shredded cheese and then fold the egg over to melt the cheese (you could

put the veggies and cheese in and do the same fold over).

 

Place the egg omelet on a plate and a side of veggies, if you didn't add the

veggies to the center...yum...an easy late breakfast, lunch or even

supper/dinner.
