Guest guest Posted July 15, 2006 Report Share Posted July 15, 2006 Rice and Lentil Pilaf 1/4 cup vegetable oil 1 onion, chopped 3 cloves garlic, chopped 1 tbsp. garam masala spice 1 cup basmati rice 1 cup red lentils 3 cups hot vegetable stock 2 green onions, thinly sliced diagonally, to garnish Heat the oil in a large saucepan. Add the onion, garlic and garam masala. Cook over medium heat for 3 minutes or until the onion is soft. Stir in the rice and lentils and cook for 2 minutes. Add the hot stock and stir well. Slowly bring to a boil, then reduce the heat and simmer, covered, for 15 to 20 minutes or until the rice is cooked and all the stock has been absorbed. Gently fluff the rice with a fork.
