Gazpacho is the perfect summer food; great to take in a lunchbox to work or a picnic in the park. Light and refreshing. Gazpacho 4 cups tomato juice 2 cups chopped seeded peeled tomatoes 1 cup diced green pepper 1 cup diced celery 1 cup diced seeded cucumber 2 garlic cloves, minced 1/2 cup diced onion 1/3 cup tarragon vinegar 2 Tbs minced fresh parsley 1 Tbs minced chives 1 tsp Worchestershire sauce [veg of course] 1 tsp salt, optional 1/2 tsp pepper 2 Tbs vegetable oil In a large bowl, combine the first 13 ingredients. Cover and chill for at least 4 hours. Stir in oil before serving. Serve cold.
