Thanks for the spanikopita recipe...made it yesterday, added

about 4 cloves of garlic and it was delicious! Even my " I don't

want to give up beef entirely, but I will eat whatever you put in

front of me " boyfriend (wierd to say boyfriend when you're in your

50's) loved it and went back for 2nds! I'll be making that often!

I served it with the salad, recipe below; don't know where I got the

recipe, even though I just got it within the last week! Jeff had

mentioned that he is up to the sandwich files in the recipe

archives...I wonder how long it took you!! I love it and I am

having a ball looking and reading!

 

Tomato Salad (fast, easy and tastes great!)

 

1 pint grape tomatoes, halved

1/4 white onion, chopped

2 avocados, diced

1/2 c. chopped parsley

1 Tblsp. olive oil

1 Tblsp. fresh lemon juice

sprinkle of sea salt

Mix all ingredients. I mixed and then let it set and meld for an

hour at room temp. Looked pretty next to the spanikopita.
