Baked Pineapple Date Pudding

 

1 cup drained pineapple chunks

1 cup coarsely chopped walnuts

1 tsp. baking powder

3 egg whites, beaten stiff or substitute

1 tsp. vanilla

1 cup chopped dates

1/2 cup flour

1/2 tsp. salt

3 egg yolks, beaten or substitute

3/4 cup sugar

 

Combine the pineapple, dates and walnuts. Sift the flour and baking powder and

salt and add to fruit mixture. Mix well and set aside. Combine egg yolks with

vanilla and gradually

beat in sugar. Stir in fruit and flour mixture then fold in beaten egg whites.

Bake in greased shallow 8 " x12 " pan in 325 degree oven for about 35 minutes.

Break or cut into pieces and serve warm or cold with whipped cream.
