Easy No-Cook Tomato Sauce

 

1 lb. 3 to 4 medium fresh tomatoes, coarsely chopped

1 tbsp. olive oil

3/4 tsp. each salt and sugar

1/2 tsp. ground pepper

1 1/2 to 2 tsps. balsamic vinegar

 

In a food processor or blender, combine and process all ingredients to make a

rough-textured sauce. Adjust flavors to taste.

Makes about 1 1/2 cups sauce.

Being lazy <smile>, I make my sauce with fresh

tomatoes with a little chopped pear which weakens the

acidic taste. I put this on angel hair pasta. I saute

some onion and garlic to put in the " sauce " as well.
