Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 garlic cloves -- coarsely chopped 1/4 cup olive oil 1 teaspoon dried oregano 1 can garbanzo beans with their liquid -- (19 ounce) 1 pound orzo 1 tablespoon chopped fresh oregano or parsley Kosher salt and freshly ground black pepper to taste Bring a large pot of lightly salted water to a boil over high heat. Meanwhile, combine the garlic and oil in a large saucepan over low heat. Cook, stirring occasionally, until the garlic is golden, about 5 minutes. Stir in the dried oregano, then the beans and their liquid. Bring to a simmer over medium-high heat. Cook until the garbanzos are heated through, about 2 minutes. Set aside and keep warm. Meanwhile, add the pasta to the water and cook until barely tender, about 7 minutes. Drain the pasta well. Stir into the simmering beans. Add the fresh oregano, and season with salt and pepper. Serve hot. Makes 8 side-dish servings.
