Vegetarian-Vegan Friendly

My experiment for the day

This is like no tapicoa pudding I have ever tasted

It's more like a pie filling. Might work for a pancake, waffle, or

ice cream topping.

Tastes very good. A light pudding for summer

I think kids would like this.

 

Tapicoa Fruit Juice Pudding

 

3 cups fruit juice (I used white grape peach)

1/2 cup pearl tapicoa ( mine was organic tiny pearl)

1/4 cup sugar(I used organic granulated cane sugar)

dash of sea salt

1/2 teaspoon apple pie spice

1/2 teaspoon vanilla

 

 

Soak tapicoa in one cup of fruit juice and let stand at least one

hour.

Place remaining 2 cups juice, tapicoa, sugar, spice and salt in a

sauce pan and simmer until thickened.

Remove from heat and add vanilla

Serve hot or cold.
