Guest guest Posted July 7, 2006 Report Share Posted July 7, 2006 Jamaican Coconut Pudding 1/2 shredded or flaked coconut 1/4 cup dry bread crumbs 1 cup soy milk 2 eggs or substitute 2 tablespoons butter 2 tablespoons sugar 1/8 teaspoon salt Preheat oven to 350 degrees. Put all ingredients in a blender and beat until smooth. Pour into a buttered pie dish and bake for 1 hour. Serves 6. Be smarter than spam.
