Guest guest Posted July 5, 2006 Report Share Posted July 5, 2006 Maple Tarragon Sweet Potatoes I took this to a friends home for Easter dinner, everyone enjoyed it and i did have to give out the recipe. Would work well for Christmas or Thanksgiving as well. 4 lbs. sweet potatoes, peeled, sliced 1/3 cup maple syrup 1/4 cup oil 1/4 cup orange juice 1/4 tsp. cinnamon 1/2 tsp. salt 2 tsps. tarragon Preheat oven to 350 degrees. Lightly oil a shallow casserole dish. Arrange sweet potato slices on overlapping rows in the dish. In a small bowl, combine the maple syrup, oil, orange juice, cinnamon and salt. Pour this evenly over the potatoes. Sprinkle the top with tarragon. Cover and bake until easily pierced with a fork, but the potatoes ought to be still firm. This should take about 30 minutes. Uncover, bake until glazed and golden around the edges, about another 25 minutes. Makes 8 servings. Get on board. You're invited to try the new Mail Beta. I am anxious to try this. I have never used fresh Tarragon . Do you know if there is a difference in strength of fresh and dried? I am assuming your recipe calls for dried.
