Guest guest Posted July 3, 2006 Report Share Posted July 3, 2006 Mandarin Almond Brown Rice 1/4 cup chopped onion 1 1/2 cups brown rice, uncooked 1 1/2 cups vegetable broth 1 1/2 cups unsweetened orange juice 1/4 tsp. salt 1/3 cup canned mandarin oranges, drained 1/4 cup sliced almonds, toasted 2 tbsps. chopped fresh parsley 1/4 tsp. pepper Spray a medium saucepan with cooking spray and heat over medium temperature. Add onion to the pan and saute for 3 minutes. Add rice to the pan then broth, juice and salt. Bring mixture to a boil. Cover, reduce heat and simmer for 45 to 50 minutes or until the rice is tender and the liquid is absorbed. Add remaining ingredients to the rice mixture and mix well. Serve hot. Makes 6 servings.
