Guest guest Posted June 30, 2006 Report Share Posted June 30, 2006 Ground Tofu Skillet Casserole Reheats beautifully for lunch! 1 package prepared ground tofu 1 tbsp. canola oil 1 medium green bell pepper, finely chopped 1 medium onion, finely chopped 1 stalk celery, sliced thin 1/2 tsp. vegetarian Worcestershire sauce 1/2 tsp. black pepper 1 1/2 cups low sodium tomato juice 1 cup elbow macaroni, uncooked 1/2 cup mushrooms, sliced Heat oil in a large skillet. Add green pepper, onion and celery and sauté until soft, about 5 minutes. Add ground tofu, seasonings, tomato juice, macaroni and mushrooms and combine thoroughly.
