Guest guest Posted June 29, 2006 Report Share Posted June 29, 2006 Green Chile and Artichoke Dip 1 4 oz. jar pimentos, drained and chopped 1 1/2 cups mayonnaise 3 4 oz. cans green chiles, drained 1 14 oz. can artichoke hearts, drained and chopped 4 ozs. Monterey Jack cheese, grated 1/2 cup grated Parmesan cheese additional grated Parmesan hot sauce or red pepper should be added for heat Tortilla chips Drain pimentos. In a mixing bowl combine pimentos, artichokes, mayonnaise, chiles and cheeses. Spread mixture into a shallow baking dish. Sprinkle with additional Parmesan cheese. Dip can be stored for baking at a later time. Bake in a preheated 350 degree oven uncovered for 30 minutes or until bubbling. Serve hot with tortilla chips.
