This is definitely a controversial topic. I have not found any

studies on either side that are definitive. I would err on the side

of caution. I don't think canola oil is that healthy even though it

is one of the oils that is lowest in mono unsaturated and

polyunsaturated oils. If it has some of the erucic acid in it, then

it may not be the best oil. Sunflower or almond oils would be better

in my estimation if you do not cook with them.

 

I just saw a short article in Yoga Journal about coconut oil.

" But it turns out theIndians may have been right. While the fat in

coconut is about 92 percent saturated, research has increasingly

shown that not all such fats are created equal. The length of the

chains of the carbon atoms in fats determines how our body processes

them; the saturated fat in coconut oil ismade up of medium chain

fatty acids, which raise blood cholesterol only slightly, if at

all. Instead of storing them, the body transmits them straight to

the liver, where they're used immediately for energy " says Peter

jones, a professor of nutrition at the School of Dietetics and Human

Nutrition at Mc Gill Universit in Montreal. "

 

My guess is that ghee is processed differently in the body than

butter because it would have the medium chain fatty acids.

one hour, or until a toothpick comes out clean.

Let cool in the pan for 10 to 15 minutes.

Makes 2 loaves.

Thanks for the heads-up, Elizabeth! I've known this for about a year now and

avoid canola oil altogether.
