I just made these for dinner tonight and could not resist trying one at lunch. I

didn't have any kidney beans in the freezer, but did have some pintos, and not

quite as much heat because my tum can't take it but they are absolutely a dish I

will make again. My veg hating son dropped by and actually tried one and...drum

roll...LIKED them. He did say I needed to add more meat. I just smiled and

Ingredients

2 1/2 tsp veg. Oil

1 onion

3 1/4 cloves minced garlic

5c. Cooked kidney beans

1 2/3 c. Water

2 Tbsp + 1 1/2 tsp chili powder

1 Tbsp + 1/4 tsp prepared mustard

1/8 tsp cayenne

2 Tbsp + 1 1/2 tsp soy sauce

3 1/3 c. Mashed sweet potatoes

10 flour tortillas

7 oz. Shredded cheddar

 

Directions

Heat oven to 350?F, heat oil in skillet, saute onion and garlic until

soft, add beans, mash and stir.

 

Add water and heat until warm.

Remove from heat and stir in chili powder, cumin, mustard, cayenne, and

soy sauce.

Divide bean mix and sweet potatoes between tortillas.

 

Top with cheese, fold, and bake for 12 min.

Serve with sour cream, green onion, and salsa.
