Guest guest Posted June 26, 2006 Report Share Posted June 26, 2006 CHEESY SPAGHETTI SQUASH 3 pound spaghetti squash 2 tbs grated Parmesan cheese 1/2 cup shredded mozzarella cheese 2 chopped plum tomatoes 1/4 cup chopped parsley Pierce squash with a fork. Microwave on high 10 min. or until soft, let stand 5 min. Cut squash in half. Use a fork, to scrape the insides of the squash to form strands, reserve one squash shell. Toss with Parmesan, mozzarella, tomatoes, and parsley. Spoon squash back into shell and microwave on high 2 min. to heat through.
