Guest guest Posted June 25, 2006 Report Share Posted June 25, 2006 Chayote and Onion Quiche The chayote can also be made into an omelet by using the ingredients without the pie shell. Serve with a greek salad for a great meal. 1 unbaked pie shell 2 medium onions 3 tender chayote or zucchini 1/2 cube butter 2 eggs or substitute salt and pepper to taste 1/2 lb. grated mild cheese (such as Jack cheese) Chop onions and chayote, cook in the butter until partly cooked. Add the cheese, salt, and pepper; mix well. Pour the mixture into the unbaked pie shell. Beat the two eggs until fluffy and pour over the chayote mixture.
