Guest guest Posted June 24, 2006 Report Share Posted June 24, 2006 Now, the Aunties do not all agree on how to do this... So this is a compendium recipe (Moroccan, Egyptian, Lebanese & Turkish!!!!). But the proportions are right. Fiddle with the spices till you have something you like. A little too much salt for me. I would probably double the spices!!!! @@@@@ POTATO KIBBEE - Veggie 2 lb. potatoes, boiled and mashed 1 tbsp. sea salt 1/2 tsp. white pepper 1/2 tsp. cumin, dried & ground fine 1/2 tsp. corriander, dried & ground fine 1/2 tsp. cinnamon 1/2 c. chopped fresh parsley 1/2 c. chopped fresh mint 1 lg. onion, grated fine 1 1/2 c. unflavored bread crumbs (or 1 can drained & mashed grabonzo beans) Paprika 1/2 c. oil 1/2 c. pine nuts Put potatoes and seasoning in large bowl and mix. Knead in bread crumbs (or grabonzo beans). Add mint, parsley, and onion. Knead well. Place in oiled basking dish. Press down well. Cut into squares or diamonds. Sprinkle top with pine nuts, paprika, and 1/2 cup oil. Bake at 375 degrees for 30 minutes or until brown. We hav etried a few recipes mostly with bulgar bit she said that it does not taste like the ones her grandma made. We'll give this a shot.
