Guest guest Posted June 24, 2006 Report Share Posted June 24, 2006 Curried Kale with Sauteed Apple and Onion 1 medium Granny Smith apple, peeled & cored, cut into 1/4 " -thick wedges 2 tablespoons butter (can use olive oil) 1 medium onion 1/3 teaspoon curry powder or to taste 1 pound kale, tough stems removed, leaves coarsely chopped 1/2 cup water 1/2 teaspoon tamari soy sauce or to taste Heat butter in a large saucepan over medium high heat until hot but not smoking, then saute chopped onion, stirring occasionally, until golden. Add apple and curry powder and saute, stirring, until apple is almost tender, about 2 minutes. Add kale and water and cook, covered, stirring occasionally, until kale is tender and most of liquid is evaporated, about 5 minutes. Drizzle with tamari soy sauce and toss to coat evenly.
