This is one that I make often and even converted a carrot hating friend over to eating carrots. 1 pound carrots,scraped and sliced (or a pound fresh baby carrots from the veg section at grocery) 1/4 teaspoon ground cinnamon 1 tablespoon margarine or butter 10 packages Equal non sugar sweetener (more if you want it sweeter) Salt to taste if you must Barely cover carrots with water. Add cinnamon and Equal. Bring to boil, cook till as you like them cooked. (Husband wants them very soft, I like them firmer). If there is water left, drain. Toss with butter or margarine.
