Guest guest Posted June 22, 2006 Report Share Posted June 22, 2006 Brussel Sprouts Polonaise 1 quart brussel sprouts 2 teaspoons salt freshly ground black pepper 3 tablespoons melted butter 3/4 cup soft fresh bread crumbs 2 tablespoons grated parmesan cheese Wash and trim the sprouts. Soak them in 4 cups cold water containing 1 teaspoon of the salt for 20 minutes. Drain. Place the sprouts in a saucepan with 1 inch of the fresh boiling water containing the remaining salt. Bring to a boil and cook uncovered for 5 minutes. Cover and cook for 10 minutes longer, or only until crisp tender, drain. Sprinkle with black pepper. Combine butter, bread crumbs and cheese. Mix lightly. Stir and cook until golden. Sprinkle over brussel sprouts. Serve hot. Makes 2 to 4 servings.
