Guest guest Posted June 21, 2006 Report Share Posted June 21, 2006 Lentil-Sage Soup 1-1/2 c chopped onions (1 lg sweet onion) 1 c celery (3-4 stalks) 1 clove garlic, minced 1 c chopped or sliced carrots (3-4) 1/4 c fresh sage leaves (may want less) 5 c water (may need more) 28 oz can tomatoes 6 oz can tomato sauce 3 c cans vegetable broth (or bouillon and water) 1 bag lentils (16 oz) 1 bay leaf 1/2 tsp salt 1/4 tsp pepper 1/4 tsp basil 1 tsp oregano 1 tsp parsley lemon juice (optional) In large soup pot simmer onion, celery in enough water to cover, 3-5 minutes. Add garlic for last minute. Add the remaining ingredients. Simmer 1 hour, until lentils are tender. Remove bay leaf. Good served with cornbread.
