Guest guest Posted June 20, 2006 Report Share Posted June 20, 2006 Jicama with Fried Potatoes 2 large baking potatoes about 1 pound total 1 pound jicama 6 tablespoons butter 1 large onion, thinly sliced and separated into rings salt and pepper 1/2 cup thinly sliced green onions, including tops Peel potatoes and cut into 1/4 inch thick slices. Peel jicama and cut into 1/4 inch thick, 1-1/2 inch square slices; you should have about 3 cups. Melt butter in a wide frying pan over medium heat. Add potatoes, onion rings, and jicama. Cook, turning as needed with a wide spatula, until potatoes are tender and golden, 25 to 30 minutes. Season to taste with salt and pepper, then stir in green onions. serves 4. Messenger with Voice.
