Guest guest Posted June 20, 2006 Report Share Posted June 20, 2006 Chayote Salad 5 or 6 chayotes, peeled and thinly sliced 2 yellow or red peppers, cut in thin slices 1 red onion, thinly sliced 1 tomato, seeded and diced in small pieces 1/4 cup cilantro, chopped juice of one lemon or lime 1/4 cup white wine vinegar 3/4 cup olive oil 1 or 2 jalapenos fine chopped Salt and pepper, to taste Toss together in a bowl and serve.
