Guest guest Posted June 19, 2006 Report Share Posted June 19, 2006 Pasta with Spinach Marinara Sauce 1/4 cup vegetable broth 1 onion, chopped 2 cloves garlic, minced 1 28 oz. can diced or crushed tomatoes 1/4 cup tomato paste 1/2 tsp. dried oregano salt and pepper to taste 2 cups tightly packed, cleaned spinach 1/4 cup grated parmesan cheese Cook 1 pound of pasta according to package directions. Drain and return to the pot. Cover pot and set aside. Meanwhile, in a large skillet, bring broth, onion and garlic to a boil and simmer until onions are soft. Add tomatoes, tomato paste and oregano. Bring to a boil. Reduce heat and simmer, stirring occasionally until mixture is thick, 10 minutes. Stir spinach into sauce and simmer, until leaves wilt. Season with salt and pepper. Add sauce to pasta and mix well. Top each serving with 1 tbsp. Parmesan cheese. Makes 4 servings. Want to be your own boss? Learn how on Small Business.
